After getting a couple of massive zucchini from a neighbor, I also tried this recipe on Sunday. It comes out tasting a lot like another Mormon classic– Funeral Potatoes! Especially if you choose to add sour cream. I’ve never tasted zucchini quite like it.

Emily says: I expect I am the only woman in Utah who can't seem to grow zucchini. I keep killing the dang plants. (Regrettably, it seems they expect to be watered on a regular basis.) Perhaps if I leave my car unlocked in the Church parking lot, some kind soul will leave me some of THEIR zucchini. It's way too embarrassing to BUY zucchini--just proof positive that one has no friends.

    Sadly I am in the desert where, if zucchini can be grown, no one I know seems to be able to grow it. I dearly miss being in Utah for college when my grandfather (who has now passed away) would bring me grocery sacks full of endless zucchini and boxes of golden delicious apples each fall. I did not then realize my bounty. Now I’m stuck buying my zucchini–the teeny weeny kind that grills well but is infuriating to make bread with. I had no idea it also proved I had no friends!

    Sorry, Angie f, I should have specified Utah. I’m sure if you’re in a zucchiniless zone, the implications are totally different. I’m certain you have dozens of friends who would absolutely ply you with zucchini if it were within their power!


  3. I don’t live in Utah or desert (I thought they were synonymous;) anymore, and I live in an apartment complex with no yards, so no zucchini for me. I miss it. I can’t even keep the mother’s day plant alive though, so maybe I’m not meant to have zucchini now.

    My daughter and I have successfully substituted grated zucchini out of our freezer for the pumpkin in Weight Watcher’s Pumpkin Cookie recipe. (The one where you mix canned pumpkin and a cake mix together.) Good to know on a Sunday afternoon when you want a treat and oops! no pumpkin in the house. And no, we are not dieting. The cookies are just dang good.
