  1. I love to cut up string cheese and put it on salad instead of using shredded.

    Um, I checked every box! I am a recovering cheese-a-holic. There are so many types of salad that all cheeses can find a home in one of them. My favorite is butter lettuce, grape tomatoes, feta and a mustard vinagrette.

    Last Saturday night, our dinner group (4 couples in all) met at our home. We served a salad with bibb lettuce, baby spinach, ripe pear cubes, dried cranberries, chopped smokehouse almonds, roasted red onion and crumbled goat cheese with a citrus dressing. The salad was the most popular part of the meal. Although very few readers are voting goat cheese, I believe that is because so few have experienced this creamy, tangy cheese. Yum!

    I’m not sure I would like to put it on my salad, but I love shredded Mizithra cheese, which I first discovered back in the late 70’s at The Old Spaghetti Factory. I always ordered the same thing - Manager’s Choice, which was a half/half of your choosing. I would order meat sauce for one half and browned butter with Mizithra cheese for the other half. Then I would mix it all together and have a lovely meal, followed by a tiny cup of spumoni. There are no more Old Spaghetti Factories in my neck of the woods. Sigh.

    I have to have cheese in my salads but it depends on what kind of salad I am having. for the most part I have feta mainly. Cheese is wonderful in almost everything.
